RUDI SMIT is the owner and head cheese monger at Olsson’s Fine Foods on Palmer Square in Princeton. Rudie and his wife Jen have owned Olsson’s Fine Foods for 8 years. Originally based in the Trenton Farmers’ Market, Olsson’s relocated to Princeton in 2011. Rudi has always had a great appreciation of artisanally-made cheeses from all over the world. Since owning the store he has increased his understanding of the finer nuances of cheese making and their impact on the taste of individual cheeses.
